Enjoy Life Pancake & Waffle Mix Review

Happy Tuesday everyone! I hope your 4th of July was wonderful and filled with delicious gluten free BBQ. I am super excited to review products from an amazing gluten free, allergen friendly company: Enjoy Life. Before I jump into a review of their Pancake & Waffle Mix, I want to share a bit of info about the company itself.

Enjoy Life states on their website that “Our tasty products are free-from the “top eight” allergens: wheat/gluten, dairy, peanuts, tree nuts, egg, soy, fish and shellfish. Products are also made without casein, potato, sesame and sulfites.” They even take it a step further and all of their products are made in a dedicated gluten free facility so they are extra safe for those with celiac disease and gluten allergies.

Well, that makes me one happy celiac girl! So this past weekend, on a very rainy Sunday afternoon, Ryan and I decided to try their gluten free pancake & waffle mix. What do you need to make this mix?? Just oil and water! Seriously that is all! As someone who has a friend with an egg AND wheat AND nut allergy, I was eager to try out this mix. Also this mix has 5g of protein!!! 😀

After adding all of the ingredients, I mixed everything in a large bowl by hand for a brief time–

nothing strenuous and my plain spoon worked just fine. I just had to try their gluten free dairy free mini chocolate chips so I loaded up my pancakes with them while Ryan opted for fresh blueberries. I used roughly a 1/4 cup of batter per pancake. Using a lightly greased frying pan on medium heat, I cooked the pancakes on each side for 1.5-2 minutes roughly.

And then it was time to enjoy! I was pleasantly surprised at how many pancakes 1.5 cups of dry mix made. We easily made 5 pancakes a piece–if not more. As for texture, these pancakes had a (gluten free) “whole wheat” kind of consistency which I loved because they were very filling. Although I piled my pancakes high with chocolate chips, I didn’t feel like I was just eating sugar, but rather actually having a substantial

The final test was how well the pancakes would re-heat the next day. As a busy graduate student, I need to prep my breakfast the night before. So being able to re-heat pancakes is key for me. I saved 2 pancakes for the next day for this purpose. I re-heated the pancakes for 20 seconds on each side and was elated to discover that the pancakes

retained their texture and flavor. YAY!

Would I use this mix again?  YES, in a heart beat. 1) celiac safe 2) allergen safe for my friends with egg and nut allergies 3) great texture 4) very filling 5) easy and fast to make. In a world where celiac is often treated as a fad diet, it is refreshing to actually have a company invested in celiac health and safety rather than just making a profit.
