Okay so this may not be entirely travel related (sorry!), but I am huge fan of baking gluten free goodies to take on trips with me. I love bread-y items because my stomach is very acidic so carb-y foods are a huge help. Muffins are a personal favorite for me because I can eat them at any time of the day and they travel well. The other day I was strolling through Trader Joe’s and stumbled upon this Pumpkin Bread/Muffin mix. GLUTEN FREE?!?! Yes! I immediately re-checked the back for the ingredients and the dreaded “may contain” but it was safe (may contain eggs or milk but not gluten. YIPPEE!!!). Considering Ryan was flying out for the weekend and he loves pumpkin bread, I thought it would be a perfect time to try these.
So Friday night Ryan and I decided to make pumpkin muffins (truly, we wanted bread but I didn’t have the right size pan. OOPS). We just needed oil, water, and eggs so very easy to make. The batter made enough for 16 normal size cupcakes—I only had a cupcake pan and was super excited to use my adorable cupcake holders so muffins disguised as cupcakes it is! I added chocolate chips to 4 of them–Ryan thought I was crazy but it was a very wise choice! We baked them for 21 minutes at 400F as suggested on the box. Word of caution: these cupcakes burn very easily!!!!!! One minute can make a difference. The top didn’t seem done on one tray so I put them back in for a minute and the bottom of the muffins burned and I couldn’t remove the paper……Watch these muffins carefully!
These muffins were fantastic!!! The cupcakes are incredibly moist and rich in flavor. They are not crumbling at all. I have been keeping some in my backpack to eat on the go and have been so happy with them. These muffins are fantastic for traveling. Throw a few in a ziplock bag and you are good for breakfast. I pair it with yogurt and a banana on the go.
Skeptical about a gluten free baking mix of a favorite dessert? Don’t be! Ryan does not have celiac and eats gluten. However, he loved these cupcakes. My gluten-eating friends did too! Try them and let me know what you think 🙂
